Spiced Apple Gammon Recipe

This is a lovely recipe where you slowly cook the gammon in the spiced apple juice or spiced cider. We ate it as a family while on holiday and it was sooooooo good. The gammon was tender and it had the most amazing flavour!! It was enjoyed by every generation in fact we enjoyed it so much that we couldn't help but over indulge!

Hot Spiced Apple Gammon with honey-serves 4-6


1.5 kg uncooked bacon joint

1 pint (568ml) of medium cider or apple juice

2 sachets of Sri Spice Mulled wine/spice apple

8 peppercorns

2 bay leaves

3 level TBSPNs of clear honey

1 level TBSPN french mustard

3 TBSPNS red currant Jelly

2 small oranges

1/2 small carton of plain yoghurt

salt and pepper

How to Make it

1.If bacon is smoked soak for a minimum of 6 hours

2. Put into large pan with cold water to cover

3.Bring to boil and boil quickly for 5 minutes

4.Drain off water and scrape rind

5.Return meat to pan

6.Add apple juice and enough water to cover, Sri Spice sachets, bay leaves,peppercorns 

7. Slowly bring to the boil and simmer for 1 1/4 hours

8. Mix honey and mustard together in a small bowl to make a baste

9.Take joint out of the pan and remove rind from joint if necessary

10.spread baste all around the joint and cook in oven for 35 minutes at 176 degrees centigrade/350 degrees fahrenheit (keep basting)

11. For sauce melt jelly gently, and mix with any extra baste if you have any and rind of 1 orange and salt and pepper

12. Boil for 3 minutes, remove from heat and add yughurt and juices from joint

13. Peel and slice oranges and use to decorate joint
